Description
Pancit Bihon is a classic Filipino noodle dish made from thin rice noodles stir-fried with meat, vegetables, and a savory soy-based sauce.
It's commonly served at gatherings and celebrations as it symbolizes long life and good health.
Ingredients
- 8 oz pancit bihon (rice noodles)
- 2 tbsp cooking oil
- 3 cloves garlic (minced)
- 1 onion (sliced)
- 1/2 lb chicken breast (sliced thinly)
- 1/2 cup sliced carrots
- 1 cup cabbage (shredded)
- 1/2 cup green beans (cut into 2-inch pieces)
- 1/4 cup soy sauce
- 2 cups chicken broth or water
- Salt and pepper to taste
- Calamansi or lemon wedges (for serving)
Steps
- Soak the noodles: Place rice noodles in warm water for 10-15 minutes or until softened. Drain and set aside.
- Sauté aromatics: In a large pan or wok, heat oil over medium heat. Sauté garlic and onions until fragrant.
- Cook the meat: Add sliced chicken and cook until lightly browned and cooked through.
- Add vegetables: Stir in carrots, green beans, and cabbage. Cook for about 3-5 minutes or until vegetables are slightly tender.
- Add liquid and soy sauce: Pour in chicken broth and soy sauce. Bring to a boil.
- Mix in noodles: Add soaked bihon noodles. Toss everything together until noodles absorb the sauce and are evenly mixed with the meat and vegetables.
- Season: Add salt and pepper to taste. Adjust soy sauce if needed.
- Serve: Transfer to a serving platter and garnish with calamansi or lemon wedges. Serve hot.
