Chicken Adobo
Description
Chicken adobo, or adobong manok, is a popular Filipino dish known for its rich, savory, and tangy flavor profile,
achieved through braising chicken in a sauce of soy sauce, vinegar, garlic, and spices.
Ingredients
- 2 lbs chicken (cut into pieces)
- 1/2 cup soy sauce
- 1/4 cup white vinegar
- 1 head garlic (minced)
- 1 onion (sliced)
- 3 bay leaves
- 1 tsp black peppercorns
- 1 tbsp brown sugar (optional)
- 2 tbsp cooking oil
- 1 cup water
Steps
- Marinate the chicken: In a bowl, combine chicken pieces with soy sauce, vinegar, minced garlic, and peppercorns. Let it marinate for at least 30 minutes or overnight in the refrigerator.
- Heat the oil: In a large pan or pot, heat cooking oil over medium-high heat.
- Sauté aromatics: Add sliced onions and cook until translucent, about 3-4 minutes.
- Brown the chicken: Remove chicken from marinade (reserve the marinade) and brown the pieces on all sides, about 5-7 minutes total.
- Add marinade: Pour the reserved marinade over the chicken and add bay leaves.
- Add water: Pour in water and bring the mixture to a boil.
- Simmer: Reduce heat to low, cover, and simmer for 30-40 minutes until chicken is tender and cooked through.
- Adjust seasoning: Add brown sugar if desired for a slightly sweet flavor. Taste and adjust seasoning as needed.
- Reduce sauce: If you prefer a thicker sauce, remove the lid and simmer for an additional 10-15 minutes to reduce the liquid.
- Serve: Remove bay leaves and serve hot over steamed rice. Garnish with chopped green onions if desired.
